Balsamic grilled veggies – a recipe

Balsamic Grilled Veggie Quinoa
Does anyone else still have a ton of summer veggies growing in their garden?
I sure do!  I was browsing pinterest and found this yummy recipe for grilled summer veggies.  

After adapting it to my family’s tastes, this is what I came up with:

Summer Veggies:
Zucchini
Squash
Bell Pepper
Onion
Cherry Tomatoes
(I left out the tomatoes because my kids don’t like them)
Marinade:
1/2 cup balsamic
1/4 cup olive oil
2 cloves of garlic
salt and pepper to taste 
Quinoa:
1 cup of Quinoa
2 cups of Water
A handful of chopped, fresh basil leaves
Start by mixing up the marinade.
Then slice up all of your fresh veggies and put them in a large ziplock bag.
Pour half of the marinade on the veggies and check them up to coat them.
Then dump them on a baking dish and spread them out.
Bake them at 400 degrees until soft (about 15 minutes).
Meanwhile, mix together the quinoa, water, and chopped basil in a pot on the stove.
Bring it to a boil and then reduce heat and simmer for about 20 minutes or until cooked.
The veggies and the quinoa should be done about the same time.
To serve, put a scoop of quinoa on your plate, and top with the balsamic grilled veggies.
We added sliced olives and fresh mozzarella because my kids LOVE both.
Then just drizzle a little more marinade/dressing on top.
My favorite way to make this is to use a fruit infused balsamic.
Mmmm….
