Grilled Veggie Panini Recipe


I met a friend for lunch last week at a deli, and had the best veggie sandwich ever!
It was so good that I went right home to try to re-create it.

 Grilled Zucchini Panini

First, start with whole grain bread, and all of your favorite veggies.
The zucchini is a must because that is the “meat” of the sandwich.
I picked zucchini, red bell pepper, spinach, olives.
Then pick your favorite cheese.  The deli used muenster, but I didn’t have any, so I used fresh mozzarella.
Last, pick your favorite hummus flavor.  I love the roasted red pepper one!
Start by slicing all of your veggies lengthwise.
You don’t want them to be too small or you will have pieces falling out all over the place.
Next, spread both sides of your bread with hummus:
Then layer on your vegetables.
I put the cheese in the middle to help everything stick together.
Then I spritzed the George Forman Grill (I don’t have a real panini-maker, but the George Forman works great!), with olive oil and put my sandwich in it.
It only took a few minutes to cook and then it was done!
After just a few minutes, everything was cooked, but not soggy.
With summer coming up, this is a great recipe for all of the fresh veggies from the farmer’s market!  I always have so many zucchini in my garden that I run out of ideas for how to use them.  This recipe is one of my new favorites for garden vegetables!
