Fresh Fruit Cookie Bars

Hello Love Stitched Readers!
I hope everyone had a wonderful Fourth of July!
Around here, all of the red and blue berries went on sale the week of the fourth.
I bought strawberries, blueberries, blackberries, and raspberries…just in case ;)
After browsing through my recipes and not finding anything that really sounded perfect, I came up with this:
Fresh Fruit Cookie Bars
I started with my favorite Sugar Cookie Recipe:
-1 cup butter
-2 cups sugar
-2 eggs
-1 tsp. vanilla
-1/2 tsp. salt
-1 cup sour cream
-1/2 tsp. baking soda
-4 tsp. baking powder
-4 1/2 cups flour
First, cream the sugar and the butter.  Then add the eggs and beat until fluffy.  Add the vanilla and the sour cream.  Once combined, add the dry ingredients.  Mix well.  Chill for about a 1/2 hour just so that the dough is less sticky.
Once chilled, scoop out all of the cookie dough into a greased jelly roll pan.
Bake at 350 for about 15 minutes or until the edges start to turn golden.
You don’t want to over-bake though, these are supposed to be soft.
Once they are done, remove from oven and allow to cool.

Frosting:

-8 oz. cream cheese

-1/4 – 1/2 cup powdered sugar

-1 tsp. vanilla

Combine ingredients and beat until creamy.

I don’t add a ton of sugar to this because the cookie is already really sweet.  You just need it lightly sweetened.

Finally, assemble it by covering the entire cookie in frosting and then cutting into squares.  I decorated them with berries individually so that each person had their own.  But you could also put all of the berries (or whatever fruit you want) on top as soon as it’s frosted.  Make sure to store it in the fridge because of the fresh berries and cream cheese.

    Very sweet, I use a recipe like this to make fruit pizza. I add strawberries, bananas, and kiwis for the topping.
