Lavendar Oatmeal Cookies

I am beyond thrilled to have my darling friend Jacqui of Baby Boy Bakery here today sharing one of her YUMMY recipes with us! Jacqui is one of those girls who you see and just go “ahhh” she is not only tall and beautiful and Oh so stylish but the SWEETEST heart warming talented gal! {yes I did just say gal}. I was so lucky to have met her and became friends with her at SNAP this year and hope to be able to spend some time with her again soon! SO here she is the talented MRS. Baby Boy Bakery….

Recently, I have fallen victim to my toddlers tantrums. Those screaming fits have taken me by storm and are rocking our world! We are dealing with them the best we know how…though most say this is the beginning of the terrible twos? (Did I mention he isn’t two yet?) Anyways, I’ve been trying to find ways to relax and take time for myself. You know to regain composure. I’ve been told lavender calms the body…Naturally, I figured out how to make it edible. Below is an amazing recipe I created for a relaxing, sweet treat. Enjoy!

What You Need
`1/2 cup butter (softened)
`1/2 cup brown sugar
`1 large egg
`3 tbs whole milk
`1tsp vanilla
`2 tsp dried lavender
`1/2 tsp lemon zest
`juice of half a lemon
`1 cup dried oats
`1 1/2 cups flour
`2 tsp baking powder
`1/2 cup white chocolate
Directions
`Mix the butter and sugar till creamy
`Add egg, milk, vanilla, lavender, lemon zest and lemon juice. Mix until all incorporated.
`In a another bowl mix flour, oats and baking powder

`Mix both the wet and dry ingredients together until a dough forms. (Dough will be dry, but should form balls)

`On a baking sheet lined with parchment paper roll out cookie dough balls. Then press them with the back of a spatula to make them flat. (Pictured Below)

`Bake cookies at 350 degrees for about 20-25 minutes.
`Melt the white chocolate in the microwave for about 1 minute or until smooth and glossy.
`When the cookies have cooled, spread the white chocolate onto the back of each cookie.
`Let the white chocolate cool and get hard….Then enjoy!
`The lemon really brings out the lavender. However paired with the sweet oats, brown sugar and white chocolate it all balances really well. They truly are delish!
